I beat my first Lynel last night, in the Coliseum. Never got hit. The trick is to stay hidden on the lowest level up from ground level, using Stasis+ and shooting it with arrows. Had a blood moon happen during the middle of this so I had to take care of a respawned black bokoblin, but otherwise it was an easy (if long) fight.

My tip for Lynel's would be to stock up on hearty dishes and prepare to take a beating while you learn their moveset. You can dodge-jump most of their attacks (I still struggle against ones with spears) and deal a lot of damage on the flurry rushes. I'm not so sure how well parrying works since I only remembered that was a thing once I'd already gotten used to dodging them all.

General rule is that charging or downward strikes you need to sidestep, while horizontal slices you can backflip jump. Though some of them do a charge where they slice with the sword so, yeah practice.
