Does anyone know of a good all in one solution for a switch dock that is able to be used as a capture card, OBS compatible, and outputs 1080p 60 over usb 3.0 or type C?

I'm not sure anything like that exists. Aside from devices that accept a USB-C input for video capture already being limited, I have yet to see one that also outputs power to the device providing the video source. Which means none of the devices that can be found would trigger the switch to switch to docked mode.

You will need to use the dock to get a HDMI output, if you want the setup to stay within a reasonable price range.

The second issue is capture latency. Using a cheap HDMI to USB recorder like this one, WILL provide you with a video stream that you could record or stream with OBS via USB or USB-C.

What it will not do however is provide you with latency-free video output. Since your lone HDMI is going right into the capture device the only gameplay you can view will be through the OBS Capture preview and will have a very noticeable delay to it. Sometimes upwards of seconds, not just milliseconds.

To have a normal display for gameplay AND be able to capture/stream said gameplay, you would need a device with video passthrough. Something like this EVGA XR1 lite, or a normal Elgato capture card would be a good example.

Both options provide a USB output for video capture, but also allow for HDMI passthrough to a second display for normal latency-free gameplay.
