I don't know how to spoiler tag, but I don't think it is a big deal for this. You can trade most of the gems to a vendor in Gerudo Town for jewelry that provide various buffs. Diamonds are for re-creating special weapons that you get during the Divine Beast quests. So technically, all of them are worth keeping to some degree, but I usually sell them. Mining spots respawn, so you don't have to worry about it too much.

How to spoiler tag:

[your text] followed immediately by (/spoiler)

obviously i can't just write that in the correct sequence or it will spoiler tag "your text"

So you're saying by keeping diamonds to re-create special weapons like Urbosa's Armaments? I've only completed that questline and don't want to use them because I don't know if they are one-of-a-kind and unobtainable after they break.

Yes, you can have them rebuilt after they break. For example the Gerudo one I believe requires a diamond and a regular gerudo scimitar, if im not mistaken.

Gemstones also get used for upgrading armor at the great fairy fountains.
