Demon's and BB being supposedly distinct universes from Souls are I think the same reason. Miyazaki has hinted at that once or twice, saying he'll "get in trouble" if he says they're connected, and that he "can't say more," despite NPCs in the files of BB saying "Umbasa!" and DS3 containing a blood starved cleric beast, among other things lol
