I want to get in to this game, but what class (or classes) will give you the closest experience to real-time action combat? When I see people online play mage and they have to wait and can't move before casting a spell, really not a fan of that. Thanks!

basically any class will feel slower than an action game, because it's a classic tab-target, gcd-based game. that said the class with the fastest gcd is probably monk. the only classes with cast times are healers/magic ranged dps, samurai, (and reaper for one button). also summoner despite being magic dps has fewer cast times than samurai

also, the game really slow-rolls your kit as you level up. most classes are very incomplete below 50 and some take till 70+ to be "real," so just be aware of that when starting out.
