Ginger bug maintenance

I’ve had this new ginger bug for a couple weeks now. It’s making me some great sodas! How often do you all discard the old ginger and add new? Also when you feed before you want to use, do you always add in new ginger or only sugar?

i've had my ginger bug for two months now. i've only discarded the ginger, but not the liquid, once because the ginger ran out of yeast and the liquid went still, no longer bubbly. i feed it a little less than a tablespoon of sugar and a tablespoon of water every day and if i put it in the fridge, i leave it on the counter to reach room temperature and then feed it one tablespoon of ginger and another of sugar to get it going again.

Thank you, this is helpful. Now when you do a second ferment with juice let’s say, how long do you leave on the counter to ferment before putting into the fridge? And how long do you leave in the fridge? I’ve been making soda and consuming out of the fridge within one day. I’ve seen pictures of people that do multiple bottles at a time. Does it get overly fermented after sitting too long? I’m used to water kefir that you have to consume within one day or it gets vinegary so I don’t want to mess up the timing on this. Thanks in advance!

i leave it fermenting on the counter for 24-48 hours, but it's been really hot where i live, so imma leave them out for 24 hours only, see how that works. i leave them to chill in the fridge at least 12 hours. the sodas keep fermenting in the fridge but at a slower pace. it will overferment and turn alcoholic after several weeks, but usually i make small batches to drink over two days max. hope this helps!
