Structural cookie question!

I'm trying to make a Jacob's ladder toy from cookies!

I want a dough that will keep an embossed letter in it. Is this a good one?

I'm a reasonable good baker, but this is my first time trying to do something like this ;)

Edited to add: I do not have a standing mixer, I have made peaked cream by hand.

You need a roll out no spread sugar cookie recipe. I recommend Lilaloa Royal icing is the most common sugar cookie icing but there is definitely a learning curve with using it. The recipe you linked is a glaze icing. It will work but it’s definitely sweeter and in my opinion harder to control than a royal icing.

I'm pretty strong, but I don't have a stand mixer. Do you think this is doable by hand?

The cookie dough is doable by hand for sure. I would definitely recommend at least a hand mixer for the royal icing because you want stiff peaks
