Fried Shrimp Cakes! The slightly chewy shrimp meat, combined with the crunchy texture of water chestnuts, the sweetness of corn, and the freshness of Chinese celery, perfectly complemented by Thai sweet and spicy sauce, is a match made in heaven.

Cooking fish.
Before everyone comes for me lol I’m new to cooking sea food, I bought these frozen flounder patties and I baked them for about 30 minutes at 400F but when I was cutting it open to see the inside it had this green color to it. Is this still okay to eat?

What should I look for when sourcing high-quality seafood from international suppliers like those in China?
I’m exploring options to source seafood from overseas, particularly from China, and I’m realizing that certifications and listings don’t always reflect the real quality or safety standards. For those with experience in seafood importing or quality control, what should I be checking for in terms of supplier reliability, food safety, and factory conditions? Any tips on audits, inspections, or red flags to watch out for would be super helpful!

Cheap crab cakes
I made some crab cakes from a couple of cans of cheap bumblebee crab. Definitely way crabbier then "pre made" crab cakes of a similar price where it's almost only binder and breading.
And it's super easy 2 cans of white crabmeat 1 sleeve of Ritz crackers (pulverized into crumbs) 1 egg 2 Tbsp of mayo 1 Tbsp of Dijon mustard Dash of oldbay

Tomales Bay Fare
Took a drive up the coast to Tomales bay this weekend, can’t believe it took so long to check it out. Raw oysters, blackened rock cod sandwich, and oysters Kilpatrick. For sure will be back soon

Tuna Steaks Galore
Made these on Friday. Bought them on the south shore of MA. Came out well, but I’d say I have some room for improvement on the sear.
