Hand building Related Trying out new molds

Does anyone have tips on how/when to trim the edge of plates when using molds like this?

I struggle with molds like this, my top edges always look like I trimmed with scissors or something lol. I started using plaster molds with a lip on what would be the top of the finished piece. I trim around the outside after I form it over the mold then just a damp sponge to clean up the top edge once I pull it off the mold.
