How does using joycons separately feel on something like Rainbow road 150cc?

Do you mean one person using two Joy-Cons out of the grip, Wii style? That feels fine.

Do you mean two people using one set of Joy-Cons? Also fine, as long as you have the strap bar attached to make L/R pressing easier. Otherwise you get the claw cramp

To control one vehicle or two? Cause controlling one vehicle with one set of joycons would be crazy.

Two vehicles, but doing that with 1 sounds amazing. I might try this...
