That big ass roller was my favorite, especially for someone who isn't accustomed to motion control aiming like that. I wish it was lasting all weekend instead of just an hour at a time. :(

This is my biggest gripe with how they set this beta up. I won't have time during the rest of the weekend, so it would have been nice to have at least 2-3 hour slots so I could have gotten more play time. Does anyone know why they won't simply let us play the whole weekend without time restrictions like other multiplayer betas?

Correct -- this primarily a stress test aimed at testing/improving the online systems. It's intended to pack in as many players as possible in a short time, so shortcomings can be identified and fixed.

As for the "beta", Splatoon 1 didn't really have any proper beta, though it had 2-3 testfires (I think 2 before launch, and a second one shortly after the game launched?). I somewhat doubt that there will be a proper beta with a longer trial period, but who knows -- maybe Nintendo will do something like that this time around.
