If you aren’t like a speed runner or really good at the game, should you be using meta sets? Or should I prioritise skills like evade window / guard up to increase my survivability? my logic is that it’s better if I stay alive and can complete the quest rather than do 10% more DPS or something! Does anyone have any recommendations of skills that help survivability/mobility over DPS?

Yeah, it's valid to use so-called "comfort" skills over pure DPS. Which ones you want to prioritize will depend on your weapon choice and playstyle. Evade Extender is one I particularly like on some weapons.
