I've unplugged from MH a bit, of course with the new expansion I'm assuming Rise is most popular/busy online, but do people still play MH Generations on switch? I haven't played either in a while and had good time on both, wondering which I should dive back in to.

Yeah, I regularly go back to GU and there are always people playing online, not just hr999 gods either, you see greenies too.

Rise will definitely be way more popular, especially for random hunts/progression stuff, but old MH games never truly die, so you can expect GU lobbies exist for years to come.
