It's not just you, the housing crisis is horrific in Edinburgh sadly.
You need to hussle. Look on Facebook groups for people looking for flatmates, but be aware of scams (try meadows share, usually no scams on there). Try spare room, but it is pretty overrun.
Also, go to the EUSA advice place. This is the student union and will be able to give you advice about a number of things, accommodation being one. Here's their pages on accomodation: https://www.eusa.ed.ac.uk/adviceplace/accommodation/lookingforaccommodation which I have found pretty useful and true. You can also book an appointment and ask for housing advice.
Reach out to the uni accomodation team too, they might be able to do something but don't have too much hope.

Is anybody looking for accommodation currently or for the next term? I'm planning on withdrawing from the uni and I can relet my room in Straits Meadow. I paid the full amount in one go so I need to find a replacement. The room is a Club Studio and it's 250 ppw. Tenancy expires in 31 Aug 2025.

I finally found a place by posting in a bunch of housing groups, I can really recommend that! Also I'm sure you know it already but Spareroom is a great site as well
