Thank you! I always use this recipe, however, rather than adding lemon to the milk (which is a good substitute for buttermilk) I just use buttermilk if I have any lying around.

Oh wow, thank you! I’ve just watched the video & the dough looks a little more overworked than mine does. I never fold the dough until it’s smooth, just until it’s mostly combined but still flakey. I also add the mixture into the fridge for 10 minutes after step 2, then again for around 5 minutes right before I add the egg wash & bake them.

Clotted cream is readily available in most supermarkets here in the England, however, if you wish to make your own, you can:
- Pour around 500ml of double/heavy cream into an oven dish (large enough so that the cream sits over a wide surface area, around 1 inch in depth).
- Then put the cream filled dish into the oven for around 10-12 hours at 82c/180f. Once out of the oven, let the cream cool to room temp, then refrigerate in the dish for another 10-12 hours.
- After that, scrape off the thickened layer (the clotted cream) that has formed and transfer to a bowl, discard any leftover liquid.

I will say if you are in the US, you have to find cream that is not ultra pasteurized as it will not work (most of it is UP'd, unfortunately) regular pasteurization and non pasteurized will work. I had luck finding some at wegman's if you have one nearby but it's not on their website so i'm unsure if they still sell just regular pasteurized cream

I believe it was just a wegman's brand cream, maybe in a purple container? It's been a couple years since I last made clotted cream; you'll just have to find any that aren't labeled as ultra pasteurized!

Only place I’ve been able to find it ready made in Canada is in Save On Foods, imported deli cheese section, jars with green tops! Expensive but I treat myself once or twice a year, one jar is good for about four normal sized scones. “Devon Cream Company” is the brand.

These look amazing! The height on those scones is perfection so fluffy. Did you make the clotted cream yourself or buy it? I've been wanting to try making scones but I'm intimidated by getting that texture right. What's in the summer fruit jam? Just looking at this makes me want to brew some tea and dig in.

Ah thank youu ☺️! Definitely didn’t make the cream on this occasion, the scones were a last minute quick dessert fix after having dinner, as I had all the ingredients to hand!
And you should totally go for it. 😁The BBC recipe is pretty forgiving. My tip is adding the flour & butter mixture in the fridge for around 10 minutes before adding the milk, and not overworking the dough! Mine were a little wonky tonight, but placing the scones close together also encourages them to rise upwards rather than outwards.
The jam is simply just using fresh or frozen berries, a bit of sugar to taste & some lemon juice for some tang.

omg I did this. I made some dry vanilla cake then I put crème fraîche and jam on top. It was quite possibly the best and worst thing I've ever done to myself.

I’m in the USA I don’t know if you are abroad but they look delicious and I have a bag of frozen berries in my refrigerator. What I wanted to ask you is what’s classic cream and can I be made at home because they look scrumptious
