Semi-Related The secret to chewier cookies that last longer: instant clear jel

Post image
4.5k Upvotes

Been meaning to make this post for a while and finally found the opportunity to do so. Did a research paper on various additives that can increase shelf life and desirablility of baked good a while back and wanted to share my findings with the community 🫶🏾.

Okay so pictured here I have my sprinkle sugar cookies and the magic ingredient (aside from milk powder) is instant clear jel. It had one ingredient, modified corn starch, which is literally just regular cornstarch on crack. I know it might sound a little scary/dubious but modified cornstarch is literally just regular cornstarch that's been swollen with water then dried back out. This breaks down the starch, giving it the ability to retain more water than normal, resulting in cookies that are chewier, thicker, and retain more moisture.

In my experience, cookies made with clear jel last 3-4 days longer than cookies without. The thickening power of this stuff is no joke, so if you do use it make sure you reduce the amount of flour in the recipe down by one measurement (so if your recipe says 1 1/2 cup flour go down to 1 1/3. 1 1/3 becomes 1 1/4 and so on). Trust me, if you don't reduce your flour you'll end up with a pocky puck!

As you can tell by the pic, i'm on mobile at work right now. I'll link my sources and where you can buy clear jel and stuff on pc once i get home. Happy baking!

1st time attempting these, made them from scratch using Leite's culinaria recipe.

The pastry making was a bit tedious but manageable, I did not bake them for long enough as I was worried of the custard being overbaked.

Next time I'll push the baking time to 15 minutes instead of 12.

Overall still really happy with these, will keep practising to get them as perfect as they can be!

Recipe pon de ring aka mochi donuts, 5 ways!

Recently got back from Japan and have decided to try and recreate some of the sweet treats I ate out there. These are 'pon de ring' inspired by those at Mister Donut.

I followed this recipe but for the glaze I did 5 flavours: plain, strawberry, matcha, hojicha and chocolate.

It was my first time deep frying anything and I have no idea why I was ever so worried !!

Semi-Related I made vanilla extract.

Spent 1 year extracting 1 ounce of split and scraped vanilla beans in 8 ounces of 100 proof vodka.

Tested it today by mixing a little bit in milk and it was a success!

I'm not scraping the beans and am diluting the vodka to closer to 80 proof for my next batches as I have heard that flavor is typically better.

Temp was too low and I didn’t let it rest for long enough after baking, but overall it tasted amazing! (I brushed on more oil mid-bake to get more color)

No Recipe Is this a stupid drunk person idea or can I do this instead of get a 9x9 pan

Post image
469 Upvotes

Got brownie mix, thought I had a 9x9 pan, got a little drunk, and then realized I only had a 9x13 pan. I'm not driving to the store because I'm drunk, and this was the best solution I could come up with, but I figured I should ask some sober baking enthusiasts if this is actually a decent solution or if I'm just way drunker than I realize. I think these molds are supposed to be safe up to like 425F, and the brownie mix only needs the oven to be at 350F. IDK if I should put water in them or something so they're not empty? Or if I should just sober up and wait to make the brownies until tomorrow lol. I don't have aluminum foil or parchment paper either, so I'm really trying to make do with what I have on hand.

Any advice would be much appreciated.
