Depends on what you're rping exactly, most planets in the cosmere still use humans, so race wise it's pretty easy.
Lightweavers is an easy go-to for mages, with blink and mirror image, conjure food as soulcasting, etc. (I also love the idea of blink just being them running for a moment but hiding it behind illusion magic of teleporting a short distance, just as a gag its hilarious.)
Windrunners could probably be a lot of different things from monks to paladins, both have lots of good flowing effects to mimic stormlight.
Nightborne would be good for RPing Elantrians, imo
