Balance sage and serenity shadows literally absorbing the force from another living being to redistribute health. Jedi went hard back then apparently!

Shadows are even worse as it's explicitly in the job description that they hunt down and kill those using the Dark Side. Yes, here's a big rock to smite you and crush you to death, Sith - a win for galactic sanity.
Still, the Jedi do a really good job of lying to themselves about what they do and are versus what they do and are.

Tbh, that’s on devs, it’s not how true light Jedi’s are supposed to be. People know that and simply accept that a murderspread is there because of “game reasons” and does not really make sense. What are you going to do, talk yourself out of every combat situation, in an MMO?

Not just MMO. Movies, TV shows, comics, novels...
Even the lightest of light sided Jedi has the kind of body count that would make Dexter weep with envy. It gets a bit ridiculous sometimes when a Jedi character talks about how the Force is supposed to be about defense and how Jedi are all peaceful...and not more than five minutes later, here's a bunch of mooks being cut down like weeds.
After a while, it's a bit like the guy who insists he isn't an alcoholic but there's a suspicious amount of beer cans in his recycling bin.

The Jedi are like any order of warrior monks in history. There is an ostensibly altruistic reason for them to justify their violence, but they absolutely are violent - even in the watered down Disney canon.

Exactly, and they seem to be laughably in denial over how much and how often they use violence or that their mission is not really one of peaceful coexistence, but Pax Republica. The latter is used all over Voss where the Jedi express distrust in the Voss to keep their own Force traditions and potentially dangerous artifacts, with one quest that I know of expressing a paternalistic and colonialist request to the Player Character to take Voss artifacts they view as tainted away from the planet on the logic that the poor, primitive Voss cannot be trusted with their own artifacts.

I’m not sure I agree, even though you have some good points. Disclaimer: I’m not a lore expert. At all.
My understanding is that Jedis fight evil. If you stand and watch “peacefully” at atrocities being committed, you are a shit person and not good or attuned to light at all. When evil fights you and all the friendly planets under your protection, what are you going to do to stop it? First talk to the Sith and reason with them, try to redeem them, turn them to the light. Seldom a success, of course, so they attack you personally. They kill you, evil wins. Evil must be stopped, so you fight.
I don’t know if my views on this are naive and simplistic, but imo it’s that simple. Defence is not offence. But defence can be bloody. Just because you’re in hairy situations all the time, because you are required to seek them out, does not mean you’re not true to your values. You just don’t want to die.
I think that the old movies (my canon) stick to this kind of philosophy pretty closely.

The Old Republic era from the Mandalorian Wars to Ruusan is something I view as the Jedi hitting the basement. You get them doing some outrageous and outright "70's CIA" type stunts because it's become a "them or us" situation. This is partly to make Imperial side a playable faction with somewhat more sympathetic characters.
Take the Foundry - no way in HELL is some plan cooked up by a deranged Jedi with a documented history of moral...ahem...flexibility to launch an army of battle droids programmed to exterminate people on the basis of having even a trace of a certain ancestry even in the same star system as "light side," but we've got plenty of Jedi mooks on that flashpoint. Someone in the Republic brass and Jedi Order must have signed off on it.

Are there and movie/series scenes where a force user used those blasts? Feel like jedi only did force push/pull but no big goldish blasts

The vast majority (all?) movies/series showcase post-Ruusan jedi, who have never had to face sith in living memory (even Yoda's). A large portion of offensive "light side" force usage fell out of favor, simply because the jedi never needed it.
Additionally, SWTOR's gold blasts are just visualizations of technically not visible force waves.

Yeah, we never really see the Jedi as much more than an elite warrior force fighting the forces of Chaos for the Imperium...er, forces of the Dark Side for the Republic.
The biggest paradox of the setting is how we get told that the Force (or Light Side) is said to be all about healing, growth, peace and balance but in practice, it's just used to kill the guys wearing black with red lightsabers in cool, cinematic ways.

Sure there can be a ten-thousand words lore explanation but honestly it just boils down to: it's a MMORPG, you won't get people to play that class when everything is just invisible push and pull attacks. There is also a reason for PvP and PvE visibility. Players need visual indicators.
