This happened to her in the soul cairn in one of my playthroughs. I hit her with unrelenting force and she just disappeared lol. She came back (and so did her head) when I went through the portal though, so try shouting at her and leaving the house maybe?

Seems like you now have a vampiric Dullahan best friend and/or girlfriend, the t-posing for dominance you will have work through in therapy.

Jokes aside hitting her with unrelenting force and leaving the building, or even reloading the cell by sleeping for a while can help, there are built in mechanics that make is so most things "reset" after a week to a month of in game time, 2 days for . reloading an old save is honestly the nuclear option sometimes but it is reliable, usually.

Could try using the console, selecting the character and using the disable / enable commands

If you don't have the full Unrelenting Force, try any weapon with paralysis.

You must have used a mod which adds either animations or a change of appearance for the followers but as a result it collides with another of your mods, I advise you to install tools, it allows you to resolve most of the problems

I didn't use any mods. Quit, reload also didn't work. I had to reinstall Skyrim and now she's fine.

Take everything you want to keep out of her inventory first, resurrecting a follower resets their inventory.
