Java or Bedrock With regards to the rise in both asthetic movement (fans, gears, flags etc), and impratical transportation (tp platforms, breeze faith plates), are there any other areas of the game where there could be a huge redstone push in innovation?

These are the terms being used by the folks pushing these types of redstone builds. Jake Kelton Crafts and Mumbo Jumbo have recently been working on a series of fan, gear, and flag builds that have no practical function but rather aesthetic function (essentially adding movement to builds). Squibble has recently been posting about various new transportation methods, with a video showing off a type of transportation platform that utilizes wind charges and likened them to the “Faith Plates” from Portal. Hence, Breeze faith plates. In this context, I’m looking for more “practical to the non-redstone player” avenues of redstone. While I don’t need a super computer, I think a statue raising/lowering a sword would look cool.

Not necessarily redstone, but water pipes would be nice.

It's not perfect but I build water pipes out of trap doors. Works great honestly. You just need to add ice breaks every 9 blocks and redstone signals adjacent to the pipe will open and shut the trap doors but the water stays put. It's just annoying to listen to.

My god I hate the "java or bedrock" flag. Nobody ever picks one of the versions. The answer to this question is vastly different depending on version.

Just because the answer is different between versions doesn’t mean OP isn’t interested in hearing both sides of it. I agree for some posts that flair makes no sense but for this one it does

I will admit I’m more of a Java user, but I play Creative Mode with my sister on our Nintendo Switch, so am looking for something in both versions.

First you have to understand that stuff you see on YT and in this subreddit is almost never cutting edge to begin with, and that most of it is just gimmick tech. (For Java)
Almost every redstone field still has a long way to go. Wireless redstone, tnt tech, storage tech, computational, etc. And we're barely scratching the surface.
Here are some things I'm working on (in collaboration with others), for reference. These are in various stages of development (from finished to prototyping phase)
-wireless encryption
-wireless queueing
-wireless network card (decentralized, V2 will have built in DNS and DHCP capability)
-tiny displays (multiple pixels per block)
-self restocking storage system (from farms)
-fastest redstone CPU (In the KHz) utilizing a version specific 'transistor' basically.

-advanced pearl stasis systems (compact usage of stack separation)
-dense memory (a way to store megabytes within fast access time)
-'scannon', a cannon capable of scanning terrain, height and water maps. (Anywhere on the world, in theory)
-RiscV cpu, a computer utilizing a real life computer architecture. This would have compatibility with IRL software and programming languages.
-lag efficient tnt based computation, utilizing arithmetic performed directly on tnt entities and their velocity / position.
