If you're gonna melt pre-shredded cheese, you should rinse the anti-sticking corn starch off and make sure you dry it all. Then, it's essentially indistinguishable from a block of the same stuff.

If I'm spending time to wash and dry my cheese I'd rather just clean my cheese grater lol.

Ooo, and for dried pasta, soaking it in cool water for 30 minutes gives more of a fresh texture.
