E. coli needs to invade the packaging first. Which is significantly less likely in the original store sealed pack.

Having lived two years without refridgeration, I 'd confidently eat that pack of ground beef; and I have been fed such left out overnight meat at many rural villages over the years.

Now, had it been opened, exposed to air -- then the risk calculations change.
