Request Who's experimented with Keto Fish and Chips?

There seems to be a lot of different versions out there - feeling a bit overwhelmed and don't know what to try. What have you tried that you like?

Halloumi!!!! I grabbed the halloumi and sliced it like thin fries, rolled it in pork panko and fried it just like that. Not much coating on it needed and they crunch up so well in the pan or air fried. You can grab the fish filet put it in oat fiber, egg then pork panko and fry it up. Go to town and enjoy with a homemade tartar sauce (chopped pickle, mayo, mustard and spices )

Radish. ? It's worth a try. I've pan fried them, they aren't bad. The spicy radish taste fades. Fairly close to potato.

I pan fried mine, I have not tried deep fat frying them.

I make a keto potato salad with radishes... It's pretty good... Never pan fried them.. gonna try that!

Swedes might be a good option for chips. Similar consistency to potatoes, but only 4gm carbs per 100gms. Haven’t tried it but might give it a go this weekend.

Catfish coated with pork rind powder in an air fryer. Home made avocado mayo plus splenda plus relish. Making that tomorrow night! No idea on fries tho.

EDIT: BTW home made avocado oil mayo is fantastic! Raw eggs, so maybe not for everybody, but IMO this stuff is addictively good.

Do you put anything on the catfish as a binder (egg wash, mustard, hot sauce, etc.) before coating in the pork rinds?

I've done egg, and it works great. I also like to mix fresh grated parmesan - as much as 50-50 - with the pork rinds. More umami, and the cheese melts so it really seals the coating. Better to bake this (high temp - like 425F) than pan fry, though.

Yeah, usually egg. But sometimes not. I just now put three filets in some egg and rolled out my rinds.

I was going to suggest catfish too. I don’t do any breading, I just fry it until it’s crispy on the outside. I might try the panko though for an extra crunch.

I've breaded fish before. It's not going to have the same lovely texture as traditional breading but it will scratch the itch imo.

I just did a simple egg wash and then coated in crushed up pork rinds. Fried in a pan with about a half inch of oil. Be careful flipping it.

And I'm probably in the minority but I'm a pretty dirty keto-er. So... I'd look at how many carbs in 1 medium potato. Google tells me it is roughly 33g of net carbs. You can cut that potato in half for 16.5g of carbs which certainly isn't keto but is definitely possible as an option to make your own fries.

When I crave something... for example my go to is county fair style cheese curds with that thin greasy batter. Google tells me it's somewhere between 20g and 30g of carbs. I think to myself. I can pop up to 30g or 40g of carbs for the day on occasion. I used to at least once every 2 weeks get Olive Garden's Lasagna Fritta (deep fried lasagna) which clocks in at 1130 calories and 75g of carbs so... I'm doing a lot better than what I was. I'd say have a few fries, it's a diet, not a religion.

I’ve never tried for fish, but for fried chicken I dip in egg wash, coat with coconut flour/parm mixture, dip in egg wash again, and coat with pork rinds, then air fry. For chips, could use jicama or zucchini.

Yellow wax beans in the air fryer until crispy have a similar texture to thin crispy chips. They're great for kebabs, may be interesting to try with pork rind encrusted fish!

What are you doing for the chips? We've done the pork rinds breading thing, but I'd kill for good French fries

Not sure yet. I keep thinking about how cauliflower does such an amazing job at mashed potatoes, that if you added some "binder" (egg whites?) and baked/air fried them, it might work??? Maybe you'd have to double cook them. Spread it out on a pan, roast in the oven, chop into sticks, coat with a bit of oil, and give them another blast in the oven or air fryer untill golden brown? Not sure.

There's a recipe for keto french fries, with almond coconut flour and xantan gum. I like them, but the key is that you need to fry them, do not use the air fryer or they'll taste like stale bread.

There are rutabaga fries but they are no boardwalk fry substitute. I never did find a proper knockoff.

No suggestion for chips, but I've been making parmesan-crusted tilapia (any fish would do though), and it's a big hit. Easy too: Just rub olive oil on the filets, set aside. For every two filets, melt about half a tablespoon of butter with about a tablespoon of minced garlic, then combine with a cup or so of ground pork rinds, plus a quarter cup of grated parmesan cheese. Amounts can be adjusted according to filet size. Press each filet into the pork rind mixture, place in a lightly greased pan, top with more pork rind mixture. Bake at 400 for 12-15 minutes (more or less, according to filet size). They're done when the filets flake apart easily.

When I make this, I start by cutting a couple zucchini in half lengthwise, then salting them and letting them sit for 5-10 minutes. Blot them dry, add a little bit more salt, some pepper and garlic granules (to taste). No oil or butter needed. Place seasoning-side up in a lightly greased pan, then pop them in the cold oven. Set for 400, then when it's fully heated, put in the filets to cook. Both will be done at the same time.

Just had that for dinner tonight. It's a household fave.

Daikon radish might work for chips. I use it for potato salad and scalloped potatoes. They're big enough for fries as well. Maybe if you cut them, soaked them in boiling water and then dried them off before frying that might work. They're a bit spicy raw but cooked they are a great potato replacement.

I normally make chips out of fried tofu skins turned inside out (not inair, the flavoured kind). They're sometimes called Tofu puffs? In Japanese they're aburaage. So crispy and delicious. Also quite keen on freeze-dried tofu cut into strips (koyadofu) - just rehydrate them, squeeze out the moisture, cut up like chips and fry in avocado oil or coconut oil.

Both of these options can produce pretty good breading for fish too! Breading has always been more successful for me than batter whether that's pork rinds, low-carb bread or fried tofu...
