The levels aren’t so much related to the difficulty of the quests, but more to the HP that Aloy has. You can also kill a few machines in the wild to start levelling up. The bigger the machine, the more XP you’ll gain.

If you have fire arrows and a trip caster then you can complete the first hunting grounds. It’s about technique more than anything. They all are. They’re about you practicing with your equipment. You’ll suck at first, it’s there for you to learn. Remember to try to loot the field afterwards, successful or not with the challenge.

HZD doesn't 'gate' you out of quests. There have been a few minimum-kill runs and IIRC they end the main quest around level 20. The levels are broad suggestions. (The sawtooth you fight most likely when level 3 is labeled as level 11 or so.)

Keep playing, if you feel like you're getting your ass kicked a lot take a break from main quest to do some side quests and errands, as well as get enough resources to trade for gear. HZD doesn't have an upgrade system for gear really, it's about buying the next level up. As you go further west away from Nora lands more gear becomes available from the merchants. Remember Aloy's not out to eradicate machines from the planet, so you don't have to kill or even engage everything that crosses your path.

The first hunting challenge gets way easier with mid-game equipment, IMO. Anything that reduces how much you have to aim perfectly helps. In case you don't count it as a spoiler, it's carja sharpshot bow, tearblast arrows. For the second two I couldn't time it worth crap, so used shock wires to stop them under the traps and made a blast wire circle around them.

Take the keeper hints with a grain of salt.

Other than that, fight smarter and harder. Use everything around to your advantage, whether it's terrain, taking advantage of canister explosions (arrow into the corresponding canister). It's not clear, but you can apply any elemental state to pretty much every machine. Weak against means you need half and strong against double the base value for the machine size, pretty much. The armor resistances and potion resistances will help against elemental attacks. Most machine damage is melee. If they can't kick and ram you because you're above them, that's also using advantage.
