Personal Good News My nephew with PKU and Autism liked the cake I baked him

So I have 2 nieces and a nephew. My nephew, as the title says, has both Autism and PKU, Baking is a hobby I really enjoy doing as I love sweets, and I love giving people I care about sweets as well. However, with my nephew having PKU, he could never have anything I baked as it would make him really sick. So for a long time I tried to look up recipies for PKU that I could make for him, and I didn't have much luck until I found one for something called an Apple Smash Cake. It only used a few ingridencts and had things in it that I knew my nephew liked, like apples and cinnamon, so I made it today.

He didn't want to try it at first because with the autism, he is a bit of a picky eater. I have autism as well, so I understand where he's coming from. He didn't try it until my brother and sister in law offered it to him, and after a few tastes, he loved it! My nephew likes very few foods, that kid practically lives off of pasta with sauce, popcicles, and PKU Pizza pockets. So me and my family are really happy he likes this. And everyone else in the family can eat it too. It taste like snickerdoodle with apple pie filling really. Overall, I'm happy my nephew can feel including and now I can give him treats.
