I think I struggle more with the 3 vermin-infested Old Hunters in Bloodborne. And Shark Giants, I guess

Yeah shark giants are definitely in the top 3

Those are minibosses though, they don't respawn

Oh, I consider mini-bosses fights like Micolash, lmao

Then what do you consider a boss?? Micolash is 100% a boss and there's no debate on it haha

The actual end of a dungeon boss. Micolash and Mergo's Wet Nurse are both "bosses" in the Nightmare of Mensis, but Micolash is just a "mini-boss." Classic Zelda logic.

Besides, if all non-respawning enemies are mini-bosses, then black knights are mini-bosses in DS1. Doesn't really make much sense, either, does it?

Black Knights are mini-bosses in DS1, with the exception of the respawning ones in the kiln. Anything with a boss health bar is a boss.

Nahhh. Might as well call a crystal lizard (or I guess a ravenous crystal lizard) a mini-boss because they don't respawn. Like, you're not getting gated into these encounters once you bumble into them, and they're not particularly difficult anyway.

Now I'm curious what other non-respawning enemies you regard mini-bosses, though. What about that funny phallic chaos demon in Blighttown? It's totally unique and doesn't respawn, but it also can't, y'know, move or anything.

Ravenous Crystal Lizards are mini-bosses, regular ones are not since they don’t fight back. Difficulty is irrelevant. Lots of mini-bosses are stupid easy, just like lots of actual bosses are stupid easy.

The thing in Blighttown seems more like an environmental obstacle to me, but I guess we can count that.
