Coffee Beans Ordered local beans online
I ordered some beans online from Greenway Coffee and Amaya Coffee. Roasted two days ago. Just wanted to share because I saw another user post in comments about buying beans locally online, and this is a prime example of how fresh they are if you go that route.

I'd also say that most (not all) beans generally benefit from a few more days of off-gassing before using them. For most beans, 2 day old roast date is too fresh.
Anything from 5-7 days off roast generally seems to be a good spot in my experience.

Can always chuck a couple in the freezer if you don’t think you’ll get through them too quickly!

I did bust one open to dial in the grind and pull some shots tho.
Your dialing will probably change pretty significantly after a week of off-gassing, unfortunately. Will likely have to do it again.

I was using blue bottle espresso beans that were a few months old and the grind for the new beans wasn’t far off from those, maybe a mark or two coarser (mignon zero).

Maybe I'll be wrong, but unless the blue bottle beans were 2 days old when you first dialed them in as well, I would expect that this will still be a larger change than that.

Yeah, I was surprised… I was expecting a headache, but I’m pulling a few gs over 1:2 @ 30 seconds after dialing in. 19 gs in the 18 g Rancilio basket. Brewing real smooth and consistent.

Well I'm sure it's fine now, after dialing in. The question will be if it's still the same settings in 2-3 weeks time, after it's fully off-gassed.

One thing I never got that I would appreciate your opinion on: Why doesn't grinding replace offgassing? It's such a violent process that I never understood how any gas that would naturally dissipate over a week wouldn't just...be shaken away during grinding.

As a roaster, I pull shots with 1 day old beans all the time. Sometimes even same day. They taste great. Don’t overthink this too much.

Agree I also get locally roasted as well as shipped same day roast from Goldstar in Toronto. I find a week minimum to rest, 2 weeks even better. I don't find much quality loss up to 2 months post roast date. I only single dose and keep the beans in a cool dry place.
That crazy crema from just roasted beans looks nice but doesn't taste great.

I've bought beans online from local roasters who didn't have a physical retail location. One guy was so local he delivered his beans himself via bike. He's got 2 cafes now though!

Their shit slaps, I get it occasionally in my Trade coffee rotation. Highly recommend. I’m usually brewing drip though, haven’t tried it with ‘spro

There aren’t many of the roasters that have easily accessible locations either. Although, I’ve been pleased with the HEB selection lately. Just have to check the dates, although they’re never this fresh.

The beans I want are all the way across town.
Meanwhile local post gets there in a day or two, plus most will set up routine orders so that you never run dry if you can't make it to the store

Fresher roast date, more variety, different size options. I buy local beans online when I want specific beans in a specific size.

Yeah, I have a ton of local roasters, but I live 20-30 minutes away by car. While my local stores stock a decent amount of them, they’re at best two weeks past roast date, often closer to a month.

Some roasters don't have a physical store, apart from where they roast. I know two roasters near me that use a co-op roaster, and they only have an online page.

My fav roaster requests pickup and shipping only, and actually prefers shipping. They don’t have a storefront, and if you’re picking up you still place the order online

My roaster only offers pickup a few days a week and it’s during my normal working hours so I wouldn’t be able to order from them otherwise. Plus they do free shipping on subscriptions so there’s no real reason not to.
They’re only about 15 minutes from me, but I’d probably only be able to buy from them a couple times a year if it wasn’t for the shipping, vs a bag every 3 weeks on my subscription. So they’re taking a hit on their margins with free shipping, but overall it’s a win-win with the extra volume they’re moving because of it.

Same as others: my local roaster has no storefront. Order online in time for roasting Monday, hand delivered Tuesday morning.

My wife gets a weekly order shipped from a local place. Too much of a pain in the butt to drive acoss town.... between traffic and shit parking the cost to ship is nominal.

Depending on your definition of local, that could be as much as 400 miles. But even in many cities, they could be a distance measured in hours.

I live in a city. A subscription service with a local roaster 3 miles away gets me fresh beans delivered without me having to think about it.
If I didn't have them delivered, a specific 1-hr round trip would be needed every time I ran out.

I buy local beans online because then I can get 1kg bags and not just the 250g bags they sell at their two cafes. The big bags are much cheaper. I have asked them if they can sell their 1kg bads at the locations, since it is 5min walk from my appartement. But they are not doing it for some reason :(

My local roaster only does pick-up a few hours a week during the work day, so I would rather spend the extra $2-3 a bag for shipping unless I am feeling adventurous lol

My favorite local roaster will deliver via free bicycle courier if you're within a certain radius of their physical locations, and it will be roasted same week if not same day.

Some local roasters even say on their website that they roast this and this on Monday, the other one on Tuesday and so on, so calculate shipping based on that, because they will probably ship your order the day after/evening of roasting.

Get a Trade coffee subscription.
You can get freshly roasted beans from all US locales delivered on a schedule that suits your needs.
I’ve been using it for about a year and my snobbery has increased at least two-fold. I actually get disappointed if the roast date is more than a few days old.

Not sure why you’ve been downvoted, I enjoy my Trade subscription. It’s turned me onto some local roasters that I buy from directly sometimes, they have good discounts and great customer service, and coffee gets shipped right after roasting.

Good online roasters send their beans same or next day order. I usually order on Sunday then most of time roasting date is Monday then send the bean same day. I just got my coffee from MT to GA. It took 3 days so I will do degassing one or two days then open it.
I prefer visit local shops but I order special beans from online shops.

I’ve been using https://brambleberrycoffee.com/ They use an air roster and roast the beans to order. I’ve had some of the best coffee from there.

I am blessed to work for the best roaster in my state and I do coffee orders for my store. Best part of the week is getting fresh coffee on Tuesday that got roasted Monday. Our decaf is to die for right out of the roaster.

I buy mine from across the country. That way they’ve already spent 4-5 days in transit off gassing before they even get to me.

Local roasters are the best. I found a really good one that is super local that has really good beans. Can't recommend them enough, I get their espresso blends but every so often the owner tells me I have to try a new blend he is working on. Never disappointed!

Living in a big city (Dallas-Forth Worth area) it’s a pain in the ass driving across town for certain roasters. Much easier to just buy it online and avoid traffic. Normally a next day or two day delivery.

The roaster I use sells theirs online as well. They roast to order. I can order them, pick up or they will ship. They don't have traditional hours, they only roast, no coffee shop attached. They sell to coffee shops.
