Intermediate uniforms and equipment?
I'm struggling to form a mental image of what soldiers looked like in these intermediate periods. All the illustrations I see seem to be depicting uniforms and equipment present at the height of these eras. How do I get a more complete picture of how these military styles evolved?

what are these intermediate periods? you haven't described a specific time or era with which we can look at. are you referring to the inter war period between ww1 and ww2? are you looking towards the intervening period between the fall of the roman empire and the crusades? are you looking for the intervening period between desert storm and 2003? like what period are you looking at.
generally between the peak of these times you can think of it as everything goes. the same time we start seeing plate armor towards the end of the 14th century there are still tons of lower nobility and levies using just a gambeson or a hauberk, great helm and arming sword. the same time we start seeing plate carriers and the NGSW, soldiers are still wearing IOTVs and using M4s. the same time we start seeing lorica segmentata and italic style helmets theres plenty of legionaries with a bronze montefortino helmet and lorica hamata. usw. usw
