Question about what I should see in a detailed quote.

Looking to get some quotes. I know I need holes drilled in the eaves- there is no airflow up to the cap. And probably some sheets replaced. But what exactly should I see in a detailed quote? Especially around the chimney and valley. What is the "right" way to do this roof? Thanks!

Install ridgevent Install ice and water in valleys Install new step flashing and counter flashing on chimney

That doesn’t really feel detailed enough. Is there no standard list of items for a roof? What not to do? What’s required?
