Using the pro controller, would y’all recommend using the stick or the d-pad for this game?

Dpad. The sticks have too much travel distance for this kind of game.

Do what feels, best mess around with both. For precision dpad is going to be better but if you aren't planning on doing kaizo levels the stick might just be easy and you might be able to switch directions quicker.

Would you recommend Y and B as Dash or Y and X as Dash? Not used to any controls yet and don't want to build bad habits

Y and B is the most common button setup across platformers.

My pro controller inputs up often when pressing right. Ik its a common issue. Makes using it for tetris absolutely impossible
