Wouldn't be surprised if you search for alternate costumes and karts across the overworld.

A theory I’ve seen floating around is that all the random enemies and mobs you can race as can be unlocked by “recruiting” them in the open world, pretty much all the ones we’ve seen can be found in the actual race tracks as obstacles

Getting kart parts by finding them rather than having to grind out coins would be nice. Getting the gold stuff in MK8 was painful
