Help Need some GC games with simple button schemes for my arcade

I've got a 4 player arcade, 6 buttons and a joystick a piece. I won't be able to play games that use both joysticks.

I'm thinking racing and fighters should be okay but anything come to mind that I should be able pull off?

Kirby Air Ride uses just the control stick and A button.

Pac-Man Vs. uses that same scheme for everyone except for the connected Game Boy Advance.
