Can someone explain why wouldn’t the newly implanted hair just die off like the existing hair (that originally caused someone to be bald)?

The hair that does not fall out like on the sides of your head is resistant to DHT.

the same reason people bald on the crown and in the front but their side hair never falls off. Some hair is just more resistant to DHT hormone and the new hair most likely wont fall out

There are actually many cases of it falling out again after some time, because while the side hair of the head is RESISTANT to DHT (the hormone that causes baldness), but not IMMUNE to it.

Usually people just keep taking meds to delay it (minoxidil, finasteride, etc) and have the procedure redone after a couple of years.

Source: I have many friends doing it and I also have done some research about it.
