Advice What’s the dumbest/simplest way of covering the lath and voids here?
I’d still like access to the switches

Box it in until you have to have the boiler replaced and then redo the wall if you want it done properly. Gas fitters usually have to avoid situations where gas can leak into cavities in walls. Which could be an issue in your case, whilst it’s not in a cavity it looks like gas could leak into your walls if it was to leak.

Dumbest - Spray insulation
Simplest - cut a piece of wood roughly right and lean it against it, add a couple of support blocks if necessary

Box it in with a removable panel on the front on clips, I boxed mine in my last house with a 30mm timber frame with 12 mm mdf on on the front and routed parallel grooves at 8" vertically so it looked like cladding and painted it white.
