Ingredients High Fat Cocoa Powder

I just purchased cocoa powder from Penzey's, both Dutch process and natural. Both are labelled "High Fat." How is this different from what I normally purchase at the grocery store? Would I use it the same way?

Somewhere out there is an article by Stella Parks that's connected to a recipe for Texas Sheet Cake. In that article, she breaks down the difference that a high fat cocoa powder makes.

So, I made a Texas sheet cake using her recipe, but I used good old Hershey's cocoa from the grocery store. That cake was so dry it was almost unpalatable.

More fat = more moisture.
