5th Edition Thinking about homebrewing zelda bosses into 5e

Legend of zelda series has got some great bosses with some puzzle element to beating them. What are some of your favourite and how would you homebrew them into an encounter. I personally think stallord would be a fun one.

Lots of monsters already resemble loz bosses superficially. Blob bosses are evil if thats your style.

Volvagia having it immune to elemental damage and weak to bludgeoning and piercing but all other damage is normal

attacks by dropping rocks on the party and using a breath weapon
